Dobson & Parnell, is seeking enthusiastic a motivated Chef de Partie with a passion for food and customer service.

The successful candidates must have:

• Great organisation skills.
• The ability to work well under pressure.
• Good knowledge of food, butchery and filleting is essential to this role.

About the Role
Most of your time will be spent preparing, cooking and presenting food. You must ensure that your staff follow the procedures agreed verbally and detailed in the Staff Handbook concerning Food Safety and Hygiene and ensure the Company conforms to all relevant legislation. You are responsible for ensuring excellent levels of guest service by: good preparation, maintenance and cleaning of the operation; effective communication between at all levels; and good teamwork.

Skills / Experience
The successful Chef de Partie candidates will have at least one year’s relevant experience, a friendly personality, excellent customer care skills and good attention to detail.

Our sister restaurant Hinnies in Whitley Bay is seeking a dynamic Head Chef

The Hooked-on Group are looking for a dynamic Head Chef to head up their brigade at Hinnies our award winning restaurant on the sea front at Whitley Bay.
Hinnies is a relaxed, warm and friendly neighbourhood restaurant serving comfort food we all like to eat – i.e. rustic and hearty Geordie-influenced classics made properly from scratch using local and seasonal produce to give a real taste of our beloved North East.

 

WHAT WE ARE LOOKING FOR:
Someone with excellent culinary skills, creativity and passion with the ability to lead, manage and inspire a team. Successful candidate will be an enthusiastic self-starter, a problem solver and a natural communicator who is focused, career-minded and driven.
The head chef will work closely with the general manager and managing director. He / She will be responsible for:
1. Driving the kitchen forward towards obtaining accolades and winning awards
2. The recruitment, training and development of a small brigade of chefs
3. Compliance with Food Hygiene, HACCP and Health & Safety regulations
4. The maintenance of consistency of taste and presentation of food
5. Working within the company framework to produce creative, original dishes for the seasonal changing menu
6. Working to set budgets for both food purchases and wages
7. Championing and upholding the company values and ethos
8. Maintaining equipment and the working environment to ensure operational excellence

 

SKILLS, KNOWLEDGE AND EXPERIENCE
The ideal candidate will be:
1. Bright, confident and enthusiastic
2. A strong character that can maintain effective communication with a diverse team
3. Absolute focus on detail, consistency and perfection
4. Understands the importance of team development and development of individuals
5. Unflappable and able to work effectively under pressure
6. Ambitious and eager to progress
Must haves:
1. Proven experience creating and executing menus either as head chef or senior sous
2. Good verbal and written communication skills
3. Creativity with – and passion for – seasonal British ingredients
4. Extensive Modern and Traditional European cooking experience
5. Able to quickly gain an understanding of specific business functions and take ownership of the resulting tasks
6. A sound financial understanding of all aspects of running a busy kitchen
